Unlimited hosting actually means that you don't have to worry about megabyte details, but you should definitely take care of how much your account takes up for security reasons. Another problem that can occur is that the site becomes slow because it contains unnecessary data, the database becomes huge and slow, and all in all it can lead to very poor performance. It's the same thing with emails, searching and sorting/analyzing emails will be hampered if they are uncontrollably filled with data.

What does unlimited monthly flow mean?

Unlimited monthly traffic means you don't have to worry about how much traffic is transferred from your account. Every time a user opens your site, he gets some traffic. That way you can have unlimited visits from that point of view. But it can cause other problems, for example if someone steals your images or content from your site, if you have unlimited traffic it will be harder for you to notice these things.
